I’ve recently gotten really into cooking/baking. If you follow me on Instagram you’ll see all my latest creations and no, I don’t make up recipes off the top of my head (I wish!). For a few months I tried all the top rated recipes on my All Recipes app and then soon realized that although they tasted amazing, were way too unhealthy, but man were they good (see here for my favorite one)! I’m definitely not the spokesperson for eating healthy. For years in college Doug and I lived off food that was quick and easy, but over the past six months I’ve become a lot healthier and started watching the nutritional value of the foods I’m putting into my body rather than the caloric count and I have so much more energy because of it! Doug and I make it our goal that when our basket is full after grocery shopping, that we see mostly bright colors of fruits and veggies. Last night I decided to cook something new and it tasted so fresh and yummy that I thought I would share! Although Daily Dose of Darling isn’t necessary a recipe hub, I like to include lifestyle tidbits and of course I had to share my outfit as well 😉 For the first time I cooked fish that wasn’t on a grill like I’m used to at my parents house. Since we don’t have a patio at our apartment, I have to resort to the oven or stove to do everything. To make the fish taste amazing, I added a couple squeezes of lemon on top, salt and pepper, and a little butter, all wrapped in tin foil and cooked for 20 minutes on 375 degrees. I wanted to keep things light and flavorful so I opted for a side of mango salsa to go with the fish and it turned out incredible! I love how the mangos give a twist on the traditional tomato based salsa we’re used to and the jalapeño gives it some kick!
I dressed down this floral strapless dress with my favorite All Saints white blazer I last wore on the blog last here. I feel like I will have this staple piece for years to come because it goes with everything and adds structure to a simple outfit. I paired it with these earrings from Lisi Lerch and my current favorite lipstick from MAC in the color ‘syrup‘. It really is the perfect lipstick and can make anyones lips appear fuller and more pouty! I love little dinners like this and sometimes making something special for your loved one is all the more reason to try out a new recipe at home.
Mango Salsa (2 servings): 1 bell pepper, 1 jalapeño, 1 mango, 1 lime, 1 red onion
