FOUR CROSTINIS, FOUR WAYS

Crostinis are the perfect appetizer you can play around with. Topping a french baguette with your favorite foods can create the best appetizer to whip up before guests arrive. I’ve created four of my own that are amazing before dinner.

Number One: The Prosciutto, Goat Cheese, and Fig Crostini

Ingredients: Goat Cheese, Fig Jam, Prosciutto, Olive Oil, Fresh Basil, Finely Grated Parmesan Cheese

Number Two: The Strawberry Balsamic Crostini

Ingredients: Thinly Sliced Strawberries, Feta Cheese Crumbles, Fresh Basil, Olive Oil, Balsamic Vinaigrette

Number Three: The Cucumber and Cilantro Crostini

Ingredients: Thinly Sliced Cucumber, Feta Cheese Crumbles, Cilantro Dressing

Cilantro Dressing Ingredients(Makes 8 Crostinis) : Puree 1 cup chopped fresh cilantro, 1/2 cup olive oil, 2-1/2 tbsp white wine vinegar, 1 garlic clove, 1/2 tsp ground cumin, 1/2 tsp minced seeded cilantro chile

Number Four: The Mushroom and Pesto Crostini 

Ingredients: Sauteed Shiitake Mushrooms, Finely Grated Parmesan Cheese, Chopped Tomatoes, Olive Oil

Pesto Sauce Ingredients(Makes 8 Crostinis): Puree 1 Cup Fresh Basil Leaves, 1/4 cup freshly grated Romano cheese, 1/4 cup olive oil, 2/3 cup walnuts, 1-1/2 minced garlic cloves, salt and black pepper to taste
