I honestly never used to eat kale unless it was in my Dad’s Albondigas soup, but after tasting a bite from my friends dish at a restaurant, I haven’t been thinking of anything else since. Different than regular lettuce with a tad bit more bite, it’s the perfect healthy mix of getting your greens in for the day and also satisfying your taste buds. Skipping over the anchovy part of a normal caesar salad(they don’t agree with me) and throwing in some avocado and lemon, this is an amazing summer salad.

Ingredients(serves 6):

• 2 small cloves of garlic, peeled and crushed
• 1 tsp Dijon mustard
• 1 tsp Worcestershire sauce
• 1 whole avocado, peeled and diced
• 2 tbsp lemon juice
• 1/4 cup olive oil
• 1/2 cup mayonnaise
• 1/2 cup fined shredded Parmesan
• 2 bunches of kale
• 3 cups crusty bread
• salt and pepper to taste
